Chef/ Stall IC (VivoCity)
OVERVIEW:
The Stall Supervisor or In-charged (IC), Shi Hui Yuan is akeyposition tolead and to manage the day-to-day F&B operations.
The key responsibilities will include supervising &preparing meals according to a prescribed system, preparing ingredients, adhering to the in-store menu, serving guidelines and following food health and safety procedures.Other duties include staff scheduling, plan daily activities, assign cooking & service tasks to fellow co-workers and to ensure high quality food delivery in a fast-paced environment.
You will work very closely with the Operations Managerto run and grow the stall operations.
Job Description
KEY RESPONSIBILITIES:
Supervision Duty
- Manage staff & scheduling once a month or fortnightly
- Organize preparation work to be completed within the day
- Lead by example
- Churn out sales report accordingly to POS data
- Harmonize good relationship amongst stall colleagues, HQ staff and suppliers
- Ensure food safety & work safety guidelines
- Proper knowledge of food storage guidelines
- Supervise and monitor colleague performance
- Able to multitask, prioritize & manage time efficiently
- Physically fit to lead & manage team members
Food Preparation
- Prepare food ingredients& meals based on established recipes
- Perform frying, braising and blanching of food ingredients
- Observe strictly & to enforce food safety & hygiene practices
- Set-up relevant stations for service hours
- Communicate with expeditor/cashier on finished product
- Able to work independently during preparation hours
Quality Assurance
- Adhere to prescribe menu & serving guidelines such as food portioning & presentation
- Ensure the food quality standard for dine-in, delivery and take-away (or Pick-up) are consistent and of the highest serving quality;
- Conduct regular monthly store and / or concept audits and ensure that SOPs are being adhered to;
- Conduct regular checks on food safety, hygiene and kitchen equipment maintenance.
Cashiering
- Take food orders from customers accurately and with a positive attitude
- Key in customer’s orders into POS
- Engage with customers in a friendly manner
- Good knowledge of the menu, with the ability to make suggestions
- Ensure customer receives their meals and take action to correct any issues
- Rotate with assigned colleagues on cashiering and service
- Collect payments from customer
- Deposit cash into Company’s assigned bank account on alternate days/weekly depending on company policy
Others
- Sanitizing of workstations
- Willing and able to operate mobile devices like 3rd party delivery platform gadget (egFoodpanda)
- Ordering of food ingredients on a dailybasisfrom approved suppliers
- Monthly inventory count
Qualifications
Professional Requirements:
- Possess Basic Food Safety & Hygiene Certification
- Work in F&B operations for at least 5-years
- Previous working experience in a team environment & various Chinese/local cooking method preferred.
